Chines Chicken Fried Rice


INGREDIENTS




Light soy sauce (2 tablespoons)

Sweet chilli sauce (2 tablespoons)

Oyster sauce (2 tablespoons)

Peanut oil (2 tablespoons)

Chicken breast fillets, trimmed, thinly sliced (600g)

onion, cut into thin wedges (1 brown)

garlic (2 pieces, crushed)

eggs, lightly beaten (2 eggs)

Cold cooked rice (3 cups)

Thai basil leaves (1 cup)

4 green onions, sliced diagonally

fried shallots (1/4 cup)





METHOD





Take a bowl and mix oyster sauce, chilli sauce and soya sauce, Set aside, Heat pan until its hot and then Add 3 teaspoons oil and swirl to coat also add half chicken and tender it for 2 minutes or until browned after that put into plate, repeat it with remaining chicken and oil.



Stir fry remaining 2 teaspoons oil and onion into wok for 2 to 3 minutes or until it gets golden, add garlic and stir fry it for 30 seconds, add rice and egg, stir fry it for 2 to 3 minutes or until egg mix up with rice



Return chicken into pen, add mixture of soya sauce, green onions and basil. Stir fry it for 1 to 2 minutes or until well mixed up. Sprinkle with fried shallots and serve it.
